Julia Ollar is a founder of Dancing Corkscrew and an experienced Certified Sommelier and wine director for Aventino, Italian restaurant in Bethesda, MD, with expertise in wine and drinks. Having a deep knowledge of wine, she is a master at blind tastings. Julia has helped to create winning and profitable wine lists, as well as wine-food pairing lists for multiple establishments. While working with a variety of types of wines, Julia focuses on smaller artisanal producers, lesser-known grape varieties and regions, and unique food and wine pairings which have allowed her to build successful wine programs in different restaurants. Julia uses a custom approach to each individual client, offering a variety of options based on business needs and goals. She has worked with 12.000 SKU wine lists, and is currently in the process of taking the advanced exam through the Court of Masters.
